CULINARY SERIES

Gain an array of culinary skills. Classes usually end with a meal at our harvest table.



Sauces Part #1 and #2

Part 1: September 10th  10:30am - 1:30pm
Part 2: October 15th  10:30am - 1:30pm

TIn this two part series, we will cover the basics of sauces.  We will begin with the five Grand or Mother Sauces, and then cover many of their modern variations.  Part 1: Stocks, Espangnole and Veloute.  Part 2 Bechamel, Tomato and Hollandaise.

Cuban

August 6th: 10:30am – 1:30pm

The Cuisine of Cuba is full of influences from across the world (Spain, Africa, China, etc.) yet remains relatively independent of the cuisine of near neighbors.  Come join us as we discover the regional variations and cooking techniques of this exciting cuisine. $65.00



Knife Skills

 

August 13th 4:00pm – 6:00pm


An essential class for all aspiring to be Julia Child and everyone else interested in the preservation of his or his digits.  You will learn the specific uses for different knives and how to safely wield them.  After, everyone will practice on a variety of foods, including some notoriously tricky ones. $25.00




How to Cook Meat #1 - Chicken

This class will explore the many ways of cooking America's choice meat.  You will learn how to safely handle raw chicken and explore different ways to cook them.  We will then taste our results. $65.00



Quick Breads

 

August 29th 1:30pm – 4:30pm


In terms of fast and reliable, quick breads are our friends!  They don't rely on sometimes finicky yeast so they can be used in a pinch and are a great introduction to baking.  You will learn the techniques to make quick breads with serveral recipes then take home your work! $65.00



The Spice of Life – Moroccan Delights

In this class we are going to make a short trip to the northern coast of Africa (for a few hours as least) to escape the mud and cold of spring in Vermont. We will explore traditional and modern flavor combinations and cooking techniques to create our own Moroccan feast. In this class we will make Dried Fruit with Yogurt and Almonds, Moroccan Stew with Vegetarian Couscous, Quick Preserved Lemons, Grilled Mint-Lime Lamb Kebabs, Yogurt, Mint and Golden Raisin Dressing and Chicken Tagine with Preserved Lemons and Olives. A Farmhouse table meal will be served after class. $65.00

  

My Thai

September 3rd: 10:30am-1:30am

In this class we will explore the basiscs of Thai cuisine including regional differences, use of fresh herbs and spices, and the balance of flavors.  We will enjoy a meal at the end of the class. $65.00

Cooking with White Wines

May 22nd: 5:30pm – 8:30pm

Here at The Store, we love wine. We love to talk about it, read about it and swirl, sip and spit it (sometimes….) but we really love to cook with wine. It is an incredibly versatile substance in both savory and sweet applications and takes on different flavor characteristics when cooked. Even if you don’t like wine or alcohol, you will love the results of this class. At the end of the class we will savor our wine dishes. $65.00


French – Springtime in Paris

April 26th: 10:30am – 1:30am
May 15th: 5:30pm – 8:30pm


Despite a distinct lack of boulevards and berets, we will have a great time concocting bistro-style fare. We will also learn a bit about French food and how the American Revolution helped give birth to the rise of bistro and thus the concept of restaurants as we know them today. At the finish of the class we will sit and dine on Basic French Pate, Mom’s French Onion Soup, Moules Marniere, Fresh Fava Beans with Bacon. Leeks Vinaigrette, Potato and Fennel Gratin, Steaks with Green Peppercorn Sauce and Steaks with Red Wine and Shallot Sauce. Mon dieu the meal we will eat after this class! $65.00


Fish 101

May 17th: 2pm – 4pm

Just because Vermont doesn’t have ocean front property we are not prohibited from enjoying the fruits of the sea (ok, we love rivers and lakes too). In this class we will take some of the mystery out of handling and preparing fish with three simple but amazingly delicious dishes. We will taste Organic Tuna Tartar, Organic Dover Sole Fillets with Tangerine Beurre Blanc and Organic Shetland Island Salmon in Vodka with Red Cabbage. Organic Sushi Grade Tuna with a tropical salsa and coconut cilantro rice. Demo class with tastes of our labors. $55.00



 A Better Brunch

Tired of stale corn flakes and coffee for breakfast? We will liven up this often overlooked meal with some quick and simple ideas as well as more elaborate concoctions including the elusive Hollandaise. Start the day off right with a breakfast of (kitchen) champions! In this class we will make Crumpets with Peach and Rose Preserves, Brioche Toast two ways, Pastries with Almond Cream and Cherry-Brandy Compote, Fresh Ginger Cake, Goldenrod Eggs, Eggs Cocotte, Ruffled Ham, Quiche Stuffed Tomatoes, Rosti with Wild Mushrooms, Asparagus with Hollandaise and Yogurt with Pam’s Granola and Preserves. Bring your appetite for a full brunch after class!! $65.00


We Love Chocolate

Ahh, Chocolate. Is there any food so worthy of our admiration? We think not, so in homage to our favorite sin we are going to create a feast of chocolate. After learning about chocolate, we will make a variety of chocolate desserts and have fun learning to plate them. Come prepared to feast like the gods on Cardamom - White Chocolate Mousse with Caramelized Peaches, Chocolate-Espresso Crème Brûlée and Flourless Chocolate-Walnut Torte with Pinot Noir-Laced Strawberries. This is a hands-on class with chocolate tastes afterwards. $65.00


Catch of the Day

 

June 19th: 5:30pm – 8:30pm


With a focus on fish species found in Vermont waters, the instructor will prepare a variety of dishes that you will then sample.  The fish will be cooked using several methods and served with sauces and sides prepared in class. $65.00



Shellfish

June 27th: 5:30pm – 8:30pm

Lost with lobsters?  Miffed by mussels?  This class will sort your crustacean confusion!  We will cover the selection, storage, cleaning and cooking methods of crustaceans including a New England Clam Bake. $65.00


 

Summer Pastas

July 17th: 5:30pm – 8:30pm

Anything is Pasta-ble.  In this class you will learn that making your own pasta is easy and well worth the effort.  Venturing out from the everyday spaghetti, we will explore the various forms and some unusual flavors of pasta and sauces.  You will leave with skills to make any Italian proud and a resolve to never return to boxed pastas!  $65.00


Sushi

July 25th: 5:30pm – 8:30pm

Haven't made it to Japan this year?  Don't worry, we will help you satisfy that craving for sushi and sashimi with this class.  Even better than just feeding you, everyone in the class will make their own rolls with any of the fresh ingredients provided.  It's much easier than you think and costs significantly less than a plane ticket to Tokyo. $65.00

Summer Soups

July 31st:  4:30pm - 7:30pm

The cold weather may be gone but that is no reason to forego your soup bowl and spoon!  With hot summer days and warm nights in mind, we will move away from the heartier varieties towards recipes made to match the seasonal produce with minimal stove-top time.

Pastry Basics

June 5th: 5:30pm – 8:30pm

In this class we will cover the very basics including pâte sucrée (sweet dough) crème Anglaise (the base for ice cream, sweet sauces, and crème brulée) and crème patisserie (used for filling tarts, éclairs, cakes, etc.).  You will take home your day's work and the skills to create beautiful pastires.  $65.00


Cake Decorating

June 24th: 1:00pm – 4:00pm

Learn the basic techniques to turn your cake into a masterpiece.  We will make traditional French butter cream, spread on the ever-important crumb coat, and learn various piping techniques.  At the end of the day, you will have a double-decker masterpiece to impress everyone at home.  $65.00

 

 

As Easy as Pie

July 3rd: 10:30pm - 1:00pm

With the Fourth of July right around the corner, we thought we'd perfect our pie skills.  You will learn the secrets of piecrusts and the importance of blind baking as we make several dough's and fillings.  You will bring home three of these all-American treats, just in time to serve them up for the Fourth.

Gourmet Sundaes

July 15th: 10:30am - 1:00pm

With the dog days of summer upon us, ice cream sundaes are just the ticket to beat the heat.  We will make ice cream in several flavors, some rather unusual.  Some old classics, as well as making a variety of classic dessert sauces and all the toppings from scratch.  Sundaes will be taken out of the realm of diners and into the truly gourmet.

Tea for Two

July 23rd:  10:30am - 1:00pm

In this class we will make a tea that the Queen would envy.  We will cover the ubiquitous tea sandwich in its many variations and an assortment of sweet tea petit fours including our own tea bread, scones...  We will learn about tea, its history, and the custom of taking tea.  And of course, no teatime would be complete without learing how to brew the perfect "cuppa". $65.00

My Big Fat Greek Dinner

WAs a last homage to summer, we are hosting a sumptuous Greek dinner.  Those attending will learn about traditional Greek cuisine then work together to make an enormous feast.  With images of white buildings lining the coasts above azure seas in mind, we will enjoy the dinner and discuss wines from the region.  Opa! Jazz it Up – The Best of Bourbon Street

With Burlington Jazz Festival and summertime in the air, we are getting ready to shake things up in the kitchen with New Orleans style food. We will learn about the influences and history of the cuisine and then make a feast that sets our souls dancing. Marti Gras beads not included. Italian – Sing for your Supper
